About Pach Vai
Five brothers, one kitchen, and the recipes Sylhet grew up on.
Our story
Pach Vai — “five brothers” — opened in Sylhet with one idea: cook the food we grew up eating, at the pace it deserves. Bhuna that takes hours, hukna shutki soaked and simmered the old way, hatkora picked at the right week of the year.
We never close. Buses arrive in Sylhet at every hour, and so do people who are hungry for something that tastes like home — a wedding party at midnight, a long-haul driver at 4am, a family after Friday prayers. The pots stay on.
What we care about
Slow-cooked, not fast
Bhuna and rezala are cooked for hours, not minutes. We would rather you wait a little than taste a shortcut.
Sourced from home
Hatkora, shutki and spices come from the same Sylheti suppliers our family has used for years.
Open to everyone
Large families, solo diners, early flights and late shifts — the door is open and the kitchen is on.
Meet the kitchen
The people behind every plate that leaves the pass.
